Two weeks ago I showed you a picture of rocky bites in my ‘week in pics’. I promised I would share with you how I made them. Its very easy and they are very chocolate and delicious.
First you need chocolate. I made them with white chocolate or with a combination of sweet and dark chocolate. What you like best. Here is the basic recipe but you can play with it.
Ingredients you need:
- 200 gr sweet chocolate
- 75 gr dark chocolate
- 25 gr butter
- 50 gr mini marshmallows (cut in small pieces)
- 50 gr biscuits
- 100 gr macadamia nuts (cut in small pieces)
- 25 gr raisins
I combined the macadamia nuts with hazelnuts and pistachios. But you could also use almonds. Instead of raisins I used cranberries and I skipped the biscuits. Just make your own combination of ingredients but I would advice not to skip the marshmallows. That’s what makes them special.
How you make it:
- Cover a bakin tin with plastic foil or use these disposable tins.
- Chop the chocolate in small pieces and heat it up in a bowl with the butter on top of a pan with boiling water. The bowl with the chocolate should not touch the water.
- Stir the chocolate and butter until they are melted.
- Add the nuts, marshmallows and biscuits to the melted chocolate and stir until all the ingredients are covered by chocolate.
- Poor into your tin and let it cool.
- After 2 hours in your fridge you can cut it into pieces.
